We went to dinner at a place called the Sandbar that we have never been to...I wouldn't suggest it...the food was alright, but the atmosphere was seriously lacking.
The next morning, my step-sister Payton and I went to breakfast at one of our favorite Folly restaurants...Lost Dog Cafe. Payton had chocolate milk and the strawberry banana french toast. I had the turkey, bacon, swiss croissant with home fries. Delish!
When I got home from Folly on Sunday morning a HUGE tree limb had fallen in our front yard/onto our front porch. Luckily, there wasn't too much damage, but I am glad I wasn't home when it happened! Jimmy's parents came over to help me clean up the mess and brought me these pretty sunflowers that they grow on their farm...
To continue with the food theme...Sunday night several of my friends came over for a little post weekend gossip sesh to catch up on the weekends events and to have dinner. I cooked my favorite chicken enchiladas and mexican green beans. I forgot to take a picture of the enchiladas, but I use the very unhealthy recipe from Paula Deen's magazine several years ago. I can't find the original recipe and I usually just dump a bunch of stuff together since I have made them so many times. The main things that I add that are not in this recipe that were in the original is some Mexican rice...I use any type (rice a roni, frozen steamfresh mexican rice, etc.) as well as some cumin and ground red pepper. SO GOOD! The green beans were also grown on Jimmy's parents farm so I boiled those until tender, and cooked down a can of rotel tomatoes with some chopped onion and then drained the green beans and added to the tomato mixture. Easy and good! I have been looking forward to eating leftovers for dinner all day today! :)
